Hailing from Fuding, Fujian, our White Peony (Bai Mu Dan) occupies a special place in the white tea hierarchy, striking the perfect balance between the pure elegance of Silver Needle (first-grade) and the robust character of Gong Mei (third-grade). This second-grade tea is crafted from freshly harvested, tender buds and two young leaves, all covered in a distinctive down of silver hairs that acts as nature’s seal of quality and contributes to the tea’s signature sweetness.

Our Bai Mu Dan is processed according to traditional methods, beginning with careful solar withering. During this crucial stage, natural enzymes within the leaves gently interact, developing the tea’s complex flavor profile without any artificial intervention. This patient, sun-driven process is what gives White Peony its distinctive floral bouquet and fruity undertones, preserving the tea’s pure, natural character.

The brewing experience is both immediate and enduring. The tea presents a pale liquor with inviting aromas of fresh blossoms and subtle umami grassiness. This leads to a surprisingly thick, creamy texture and a clean, sweet finish. Yet, this tea also possesses remarkable aging potential; with proper storage, its bright floral notes gradually deepen into richer honey and dried fruit characteristics, making each year a new discovery and truly embodying the evolving nature of a treasured white tea.
